You can skip this. No need to use Shaoxing Wine.

There is a new (at least to me) mail-order internet business called Weee! that specializes in east and south asian (and some hispanic) foodstuffs at sayweee.com. I believe they operate out of New Jersey. They have at least two brands of the red fermented bean curd. And a lot of other things. I think their pricing is competitive with the other internet shopping sites where one can get such things.

Hi Holo,
This is no need to use grill function. In most cases, we say we bake the bakery and roast the meats. Sorry for the misunderstanding. Happy cooking!

Or does it mean that i need to utilize the 'grill' function of an oven

Thanks for the suggestion, Antony! That's a great natural coloring.

If you can't get fermented red tofu you could try beetroot powder.

That's good, Andrew. Then you are well loaded with the ingredients.
