you mention "ginger liver". I presume this is done using pork liver? Can I just use this recipe to prepare them or are they treated differently?

By the way, if you have any other recipes using liver or kidneys of pork, cattle or chicken I'd be happy to try them out.

I'm also having trouble getting fresh ginger. And if I do it's quite expensive. I've sometimes noted fresh sprouts on "old" ginger during summer. Have you ever tried to grow ginger yourself and if so do you have any advice on how to do this?

You can try to pinch it with your fingers. Fresh ginger has lots of water and the fiber is easy to break. While the older ones are quite dry and tough.
