Now, for a total noob like me, what are alkaline noodles? Mie noodles, Vermicelli, or can i even use european Spaghettis?

There is 1 restaurant where I always want to order the dan dan mian - even when I know it'll mean I will end up too full. And, they don't even use ya cai in their noodle! (It's a Taiwanese restaurant.)

This recipe is perfect because now I can make it myself at home and won't have to order it at the restaurant anymore. This means I will have room in my stomach to eat more of the other dishes I like there. ?

I think maybe you've adjusted your dan dan mian recipe because I've made a recipe on your website before and didn't like it. Or maybe I'm better at following directions now. Anyway, it made a perfect lunch today. Savory, hot and numbing.
