Century eggs can be kept in room temperature. Use by means the expiration date. You should use the eggs before that date on the bottle.

They were in a refrigerator when purchased from the Asian store. Do they have to remain under refrigeration until eaten or can they be stored (unopened) at room temperature? Secondly, what is the 'use by' or 'expiration' date? There is nothing anywhere on the package about storage or expiration dates. I emailed the manufacture several months ago, but have yet to receive a response. Can you help me with this? We don't want to try to eat the eggs if they are not preserved, but rather - spoiled.
