So delicious, and not too difficult to make. Definitely get the long eggplants if you can find them, they really are different than the big round ones. And serve them with rice or noodles, you'll want to soak up every last bit of the sauce!

Elaine, just made recipe. I discover it doesn't say when to add the eggplant! Do you add the eggplant before the bowl sauce, or add the bowl sauce and then the eggplant? I would have liked the eggplant a little softer - any tips? Cut them smaller or steam before frying?

Hi Elaine,
Looks like a great recipe - I love this dish in restaurants and can't wait to make it. One question - in step 4 you add the chopped peppers in 2 different steps. Do you divide them in half? If not, which one is correct? Add with the doubanjiang or with the garlic?
